BEHOLD, THE PURPLE SWEET POTATO

Purple sweet potatoes may sound fancy, but simply sweet potatoes that contain more of the antioxidant anthocyanin – the agent responsible for this tuber’s purple shine – than others. While food bloggers may appear to champion the fanciest of fare, we love our lazy meals.

I’m talking ‘bout meals we always have ingredients on hand for. Meals that only require one pot. Meals that are easy to plate. Meals that are easy to eat. Often days, after testing one or multiple recipes for several hours, the LAST thing I wanna do is make some complex meal for dinner.

Mashed sweet taters, to be exact.

Assembled by simmering purple sweet potatoes in ginger infused coconut milk until fork tender – rounded out with a touch salt and brought to life via a squeeze of fresh lime – the result is a meal whose flavors will turn your tastebuds into a dance floor, all while remaining incredibly simple. Hello easy nutritious meal who stands up on her own or pairs beautifully with tamari seared tempeh (as shown), or crispy curry tofu, or handfuls of granola & banana slices.

Essentially, this is a meal fit for any time of day. And with sweet potatoes being so dense in nutrients, full of complex carbs (those are the good kind), easy to digest, and affordable, why not eat them for breakfast, lunch, and dinner?

Coconut

  • Servings: 2
  • Difficulty: Easy

A tropical twist on mashed sweet potatoes, sparkling with lime, mellowed out by coconut, and cut through with ginger.

Ingredients

  • 1 large sweet potato (preferably purple), peeled and diced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, minced
  • 1/2 lime, juiced
  • salt to taste

Tamari Tempeh (optional):

  • 6-8 oz tempeh, cut into large chunks
  • 1 tbsp tamari
  • 1/2 tsp onion powder
  • crushed black pepper
  • water

Directions

  1. In a medium saucepan, combine diced sweet potato, coconut milk, ginger, and a heavy pinch of salt. Bring to a boil over high heat, then turn heat down to medium-high, cover with a lid, and cook – stirring occasionally – until sweet potatoes are very tender, 10-15 minutes.
  2. Move the contents of the pot to a large bowl, add lime juice, and mash until smooth. Taste and adjust seasoning if needed, adding more lime for brightness, more salt for saltiness, or more coconut milk for silkiness. Serve as is or with tamari tempeh.
  3. For tamari tempeh, place tempeh chunks in a medium non-stick pan along with enough water to come most of the way up the sides of tempeh. Uncovered, bring to a boil over high heat and cook until all the water is evaporated.
  4. At this point, add onion powder & tamari and cook until lightly browned on two sides, flipping after the first side has browned. Should take 2-3 minutes in total.
  5. Serve atop sweet potato mash along with a sprinkle of crushed black pepper.
